Salmon Caprese

Being on diet doesn’t mean I should eat nothing but grilled chicken and fish. It’s not about “suffering” !
I decided to really pamper myself everyday and come up with a good fulfilling recipe.

Salmon is one of the best options when you are on diet. It has all the healthy fats you need, high in vitamin B and it is a great source of protein! What I love the most about it is that you can get creative and cook really amazing recipes with salmon. 
I am sure you have all heard of Caprese salad!

Today i present to you my seafood version of Caprese: Salmon Caprese.
Super easy to prepare ! Honestly, super easy; I finished it in less than an hour. 

Ingredients :

  (For 1 person)

  • 200 g salmon fillet
  • 100 g fresh Mozzarella cheese
  • 6-7 cherry tomatoes
  • 1/4 cup balsamic vinegar
  • 2 Tbsp olive oil
  • Salt and pepper
  • Bunch of fresh basil

Directions

  1. Marinate the salmon fillet in a zip lock with balsamic vinegar and olive oil for 30 mins.
  2. Use the Hasselback technique (cutting crosswise slits every half-inch along the salmon fillet) and insert the mozzarella slices.
  3. Heat up a cast iron skillet, season salmon with salt and pepper and cook for around 4 – 5 mins with the cherry tomatoes
  4. Transfer the cast iron skillet to a preheated oven 180 degree celsius. Bake for 10 mins.
  5. Drizzle some balsamic vinegar and sprinkle fresh basil on top.
