
I have a constant struggle with my son when it comes to eating more vegetables. But being a peaky eater, he refuses to eat vegetables (like broccoli, peas carrots, etc).
So, I always try hiding veggies in his food by cutting them into small bits, and mixing them with rice or yogurt.
Today, I had some broccoli and carrots that I needed to use. So, I came up with Vegetable Chicken Nuggets.
Chicken Nuggets are one of his favorite meals. So why not mix them with vegetables? I was confident he will never notice or suspect anything !
Here’s a healthier version of Chicken Nuggets.
By the way, HE ATE A WHOLE PLATE!

Ingredients:
- 250 g chicken breasts
- 2 medium size carrots
- 1/2 small head of broccoli
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 1.5 tsp mustard
- 2 cups breadcrumbs
- 2 cups flour mixed with 1 tsp black pepper / 1 tsp oregano /1 tsp basil
- 1 cup of milk
Directions
- In boiling water add the carrots and broccoli and cook them for 6-8 mins.
- Remove and put aside
- Cut chicken breast to small cubes
- In a food processor, add the broccoli with the carrots and mix.
- Next add the chicken cubes and mix
- Add the garlic and onion powder along with the salt and mustard.
- Mix one last time until you have something like paste.
- Prepare your work station
- Put flour with herbs in a plate, breadcrumbs in a plate, and milk in a cup
- I tried to make the nuggets in nice shapes using a cookie cutter but this didn’t really work. So just shape them the way you like.
- Dip the nuggets in flour then milk and then breadcrumbs.
- I ended up dipping each nuggets in flour and milk two times before dipping in breadcrumbs. This will help the nuggets hold shape better.
- Put them in the fridge for half an hour.
- You can bake these or fry them. I did fry this batch cause it was the first trial and I wanted to freeze some.
- The ones I made for freezing I fried them half the time.
