
Ratatouille ! And I don’t only mean the movie but the dish !
I remember the first time I watched the movie, I fell in love with ”Rémy” the sweet blue rat who is so passionate about cooking that he actually succeeded to turn a simple garbage boy “Lou” into a remarkable chef. I have watched this movie many times that I lost count and it is still one of my favorite movies.
Today I wanted to try the famous ratatouille french dish.
Well, the presentation is definitely not as beautiful as the one “Rèmy “ did but the taste was amazing
Ingredients:
- 1 eggplant sliced
- 3 zucchini marrow. Or 1 green zucchini sliced
- 2 small potatoes sliced
- 2 tomatoes sliced ( I used red pepper instead)
- 1 onion finely diced
- 6 garlic cloves ( 2 minced and 3 chopped)
- 2 TBsps fresh chopped Basil
- 3 TBsp olive oil + more for the top
- 1 tsp oregano
- 1 tsp thyme
- 1.5 tsp salt
- 1 tsp tomato paste
- 500 ml crushed tomatoes
- 1/2 cup water
Directions:
- Cut all the veggies into thin slices ( It is better to use a Mandoline if you have, in order to have similar thickness , plus it is much easier)
- In a pot boil so water , add only the potatoes and let them cook for 5 mins .
- Drain water and remove excess water with a kitchen towel.
- In a pan add olive oil with onions , chopped garlic and red pepper and cook until golden.
- Add the crushed tomatoes ( I used ” Pomi”).
- Add tomato paste, water and salt.
- Add the fresh chopped basil and oregano and let the sauce simmer for 5-7 mins on low heat.
- Once done , add the sauce in the bottom of an oven pyrex or pan.
- Start stacking the veggies .Layer them the way you like it.
- Mix some olive oil with minced garlic fresh basil and thyme and drizzle over the veggies.
- Cover with foil and bake in a preheated oven 190 C for 50-55 mins.
- Remove the foil last 5 minutes and let it bake uncovered.
