Garlic Soup

I am sharing with you again this Austrian Garlic soup!
It is one of the best soups I have had. I tried it during my visit to Salzburg at a small house restaurant owned by a nice family.
It was so good I had to try it at home as soon as I was back! 

Truly delicious and so fragrant with aromas; plus, it has a taste you won’t easily forget. It is also full of anti-oxydants that will boost your immune system and help you fight all the flu viruses. And don’t worry you won’t need a bunch of mint drops after it ! (lol)

Ingredients:

Servings : 6 persons

Prep Time: 10 mins

Cooking time : 1 hour

  • 26 garlic cloves un-peeled
  • 18 garlic cloves peeled
  • 2 medium size onions
  • 1 TBsp chopped fresh thyme
  • 1/2 Tsp fresh or dried rosemary
  • 4 cups chicken or vegetable broth
  • 1/2 cup cooking cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 TBsp olive oil
  • 2 TBsp butter
  • 2 medium size potatoes ( optional)
  • 1/2 cup parmesan cheese (optional)
  • Croutons and parsley for garnish

Instructions:

  1. Add 26 garlic cloves to a pan with a drizzle of olive oil salt and pepper . Don’t peel just remove the upper head.
  2. Cover the pan with foil and bake in preheated oven 160 C for 45 mins.
  3. Let the cool down then peel off the skin.
  4. Melt butter in a pot, add sliced onions and olive oil along with thyme and rosemary. Cook until translucent.
  5. Add the roasted garlic and the raw garlic and cook for around 3mins.
  6. Add the broth , potatoes and salt and black pepper. Cook on low heat covered for around 20 mins or until garlic are super tender.
  7. Remove pot from heat and let it cool down before blending it with a hand blender .
  8. Add cooking cream and parmesan cheese and stir well.
  9. Put the soup back to heat on low and let it simmer for a couple of minutes.
  10. Toss some freshly baked croutons and some chopped parsley on top. Serve it with a squeeze of lemon.
