Mushroom and Rice

This dish is just the perfect savior for your hectic days! 
Mushroom and Rice!
It’s super easy to prepare. Very light because I use as little oil as possible. And btw, it’s kids friendly too 

My mom used to prepare it all the times for us. Usually with a side of small fried potato cubes. Personally, I prefer it alone without the fries. I’ve probably grown  because back in the day, fries was the only way we would finish our plates.
So, I haven’t introduced my son to this “trick”. Still, he likes this meal !

Ingredients:

Servings : 4 persons

Prep time : 15 mins

Cooking time : 30 mins

Total time : 45 mins

  • 1 kg of fresh mushroom
  • 300 g minced meat
  • 2 TBsp oil
  • 2 Tsp sweet pepper
  • 2 Tsp Salt
  • 1 TBsp fried pine nuts

Directions:

  1. Clean, peel and slice mushrooms
  2. In a pot add minced meat with oil , salt and pepper and cook until well done.
  3. Add sliced mushrooms to the meat and cook .
  4. Cook on medium high heat until all the water from mushroom has evaporated.
  5. Serve it with vermicelli rice and fried pine nuts.
