You will see me post a lot about leftover food. It’s simply because I’m against throwing food away. I always think of ways to reuse whatever I have left over into preparing a tasty dish. This way, I don’t throw it away and at the same time, I don’t store it for long !
I try to cook adequate portions and on daily basis for fresh meals. However, sometimes you simply can’t.

Rice. I always end up with a quantity aside after preparing a dish with rice as a side. So, this time I used it to prepare an easy and extremely delicious soup. I crave it whenever I get sick. Funny enough, the sour taste of lemon juice in it makes you fresh. It’s better if you prepare it with beef or bone broth; but if you don’t have the broth ready, you can use water and it will taste just as good. Enjoy !

Ingredients:
- 2 cups cooked rice*
- 5 cups beef broth or water
- 1/2 cup cooked meat balls ( optional)
- 1 small potato cut into cubes
- 1/2 cup fresh lemon juice
- 2 TBsp worcestershire sauce
- 1 tsp sweet pepper
- 1/2 tsp black pepper
- 2 tsp salt
- 1/2 cup chopped parsley
Directions:
- In a large pot, add water or broth with cooked rice and bring to boil
- Lower heat to medium and keep it cooking for around 7- 8 mins or until rice is overcooked and is almost transparent.
- Add the meat balls and potato cubes.
- Add spices and worcestershire sauce
- Keep it on medium low heat for around 10 mins or until potatoes are fully cooked.
- Add lemon juice and parsley and serve
Notes:
*If you don’t have leftovers rice you can still make it by adding 1/2 cup dry rice and cook it for a longer time.
