Rice Soup

You will see me post a lot about leftover food. It’s simply because I’m against throwing food away. I always think of ways to reuse whatever I have left over into preparing a tasty dish. This way, I don’t throw it away and at the same time, I don’t store it for long !
I try to cook adequate portions and on daily basis for fresh meals. However, sometimes you simply can’t.


Rice. I always end up with a quantity aside after preparing a dish with rice as a side. So, this time I used it to prepare an easy and extremely delicious soup. I crave it whenever I get sick. Funny enough, the sour taste of lemon juice in it makes you fresh. It’s better if you prepare it with beef or bone broth; but if you don’t have the broth ready, you can use water and it will taste just as good. Enjoy !

Ingredients:

  • 2 cups cooked rice*
  • 5 cups beef broth or water
  • 1/2 cup cooked meat balls ( optional)
  • 1 small potato cut into cubes
  • 1/2 cup fresh lemon juice
  • 2 TBsp worcestershire sauce
  • 1 tsp sweet pepper
  • 1/2 tsp black pepper
  • 2 tsp salt
  • 1/2 cup chopped parsley

Directions:

  1. In a large pot, add water or broth with cooked rice and bring to boil
  2. Lower heat to medium and keep it cooking for around 7- 8 mins or until rice is overcooked and is almost transparent.
  3. Add the meat balls and potato cubes.
  4. Add spices and worcestershire sauce
  5. Keep it on medium low heat for around 10 mins or until potatoes are fully cooked.
  6. Add lemon juice and parsley and serve

Notes:

*If you don’t have leftovers rice you can still make it by adding 1/2 cup dry rice and cook it for a longer time.
