Chicken Stew

This is one of our family’s favorite meals. When I say family, I definitely mean the little dude in the house, since he’s the one deciding these days what to cook.
Chicken stew or “Dili3 w rez” is somehow a healthy meal since it is made of chicken broth and we all know the benefits of chicken broth. 


Mom used to prepare it a lot for us especially during the cold school days. I remember arriving home, freezing from the cold and starving. I enjoyed seeing this plate on the table. So heartwarming with it is tangy sour taste of lemon.


Mom makes the best “dili3”. I wish I can make it as good as hers. Anyway, here’s my attempt of making my mom’s famous chicken stew.

Ingredients:

Serves : 4 – 6 persons
Prep time : 15 mins
Cooking time : 45 mins

  • 3 cups shredded chicken or chicken breasts
  • 6 cups chicken broth*
  • Juice of 1 lemon
  • 3 Tbsp flour
  • 1.5 Tbsp butter
  • 2 tsp salt **
  • 2 tsp pepper 
  • 3 tsp Worcestershire sauce
  • 1 large potato cut into small cubes ***

Directions:

  1. Start by shredding the chicken , I had some shredded chicken tights frozen so I just defrosted the chicken. If you are using chicken breasts you can cut them into small cubes
  2. In a medium saucepan, melt butter with the flour and whisk until well combined and you have no white specks remaining. It should take around 2 minutes to start to be brown.
  3. Turn off the heat
  4. Using a fine mesh strainer, slowly add 1 cup of stock into the flour mixture, whisking constantly to blend smooth and lump free.
  5. Whisk in the rest of the chicken broth, over high heat.
  6. Add the chicken
  7. Keep stirring until the sauce starts to boil and thickens.
  8. Add potato cubes.
  9. Add salt and pepper and worcestershire sauce and stir.
  10. Let the stew simmer over low heat for 10 mins.
  11. Finally stir in the lemon juice (adjust to taste)
  12. Serve it with vermicelli rice

Notes:

* if you don’t have enough chicken broth you can simply use water with half cube chicken stock

**I did use only 2 tsp salt as my chicken broth is already salted if your chicken broth is not salted you might want to add more salt

***You can skip the potatoes and instead use carrots or even both
